At Stingray Beach, a small-group workshop led by hosts such as Wendy or Lucy traces chocolate making from cacao to finished treat. You make a small amount of chocolate, taste seven or more Mexican varieties, and try red and white wine pairings. The session lasts about two hours, with an air-conditioned room and beach views.
